Mixed Green Salad Topped with Baked Salmon
Ingredients:
1, 6 oz Salmon filet
1 bag, Dole Spring Mix Salad
1 ¼ cup radicchio, shredded
¼ cup yellow bell pepper, diced
¼ cup red bell pepper, diced
½ cup Meijer Light Balsamic Vinegar
1 ½ Tablespoons all-purpose seasoning blend
Salt and Black pepper to taste
Preparation Instructions:
Begin by preheating the oven to 450 degrees. Line a small tray with aluminum foil that is sprayed with non-stick spray. Then coat the top of the salmon with the all-purpose spice blend and pepper. Bake the salmon for 10 minutes per inch of thickness. For example if your salmon is an inch and a half thick bake it for 15 minutes. While your salmon is baking toss the vegetables in with the spring mix and lightly coat with the balsamic vinaigrette. Serve the salmon on top of the bed of lettuce.

Creamy Alfredo with Salmon
Ingredients:
5 cups, Meijer Naturals Whole Wheat Rotini Pasta, cooked (approximately 2 ½ cups uncooked)
2 lbs Atlantic Salmon, fresh, large dice
½ cup snow peas, halved
1 cup button mushrooms, sliced
¾ cup cherry tomatoes, halved
3 Tablespoons butter
2 Tablespoons flour
3 cups milk
¾ cup parmesan, freshly grated
½ teaspoon dill
½ teaspoon thyme
¾ teaspoon rosemary, dried, chopped
Salt and pepper to taste
Cooking Instructions:
Begin by melting 1 Tablespoon of butter in a non-stick sauté pan. Then add the salmon seasoned with the dill, salt, and pepper. Allow these to sit long enough to gain a nice golden brown color on the edges. The salmon should be cooked over medium heat for 10 minutes per inch of thickness. While the salmon is cooking melt the remainder of the butter in a sauce pot. Once the butter is melted begin sautéing the mushrooms and snow peas. These should be softened within 7-9 minutes over medium heat. Once the mushrooms are tender stir in the flour. The flour should be fully absorbed by the butter to create a paste like texture. Continuously stir this for 3-5 minutes. Then add the milk. Stir the milk and flour paste so that the paste is fully incorporated and there aren’t any flour chunks. Bring this to a boil and add the cheese. Once the cheese is melted and incorporated remove the sauce from the heat. At this time add the tomatoes and season. Serve with a bed of pasta with the sauce poured over and topped with the salmon.
