GRAND RAPIDS, Mich.,-- Looking for a hearty dinner casserole recipe that doesn’t take a lot of time? Then check out this classic beef pie featuring Green Giant® Valley Fresh Steamers® mixed vegetables and Progresso® broth – topped with mashed potatoes. An affordable family pleaser!

 Easy Shepherd’s Pie

Makes 6 servings

1 tsp. Meijer olive oil – on hand

1 small onion, finely chopped (1/3 cup) - $ 0.10

1-1/2 lbs. ground beef sirloin - $8.83

2 cups Green Giant™ Steamers™ frozen mixed vegetables (from 12-oz bag) - $1.25

3 tbsp. tomato paste - $.26

1/2 tsp. salt – on hand

1/4 tsp. pepper – on hand

1-3/4 cups Progresso™ beef-flavored broth (from 32-oz carton) - $1.17

2 tbsp. all-purpose flour – on hand

1 package (20 oz.) refrigerated mashed potatoes - $3.29

  1. Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  2. In 12-inch skillet, heat oil over medium- high heat. Cook onion in oil 5 minutes, stirring occasionally, until soft. Add beef; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Drain.
  3. Add mixed vegetables, tomato paste, salt and pepper; cook over medium heat 5 minutes, stirring frequently, until vegetables are hot. In small bowl, mix broth and flour with whisk. Add broth mixture to beef mixture. Heat to boiling; cook 3 minutes, stirring constantly, until thick. Spoon beef mixture into baking dish. Spread mashed potatoes over beef mixture; fluff with fork.
  4. Bake 20 minutes or until golden brown.
