Tips on how to make an easy, healthy school lunch for the kids with Katie Kimball

The school year is just around the corner, and you want to make sure you're sending the kids off to school with a healthy lunch. Just because you want the kids to have a healthy lunch, doesn't mean it has to be hard and time consuming.

Blogger mom Katie Kimball from Kitchen Stewardship, brought the kids to show us how easy it is to give the kids a healthy lunch.

Katie says there are four goals to keep in mind when making a lunch for the kids. Make sure the lunch has:

  1. Healthy food choices
  2. A balanced diet; a variety of food groups
  3. The correct amount of food; don't give your kids too big of portions
  4. Efficient to put together; it doesn't need to take hours to make your kids a healthy lunch that they'll devour in 10 minutes.

Here's just a few things that you can pack in your kids' lunches to begin steps towards a healthier diet:

  • Veggies
  • Whole fruits
  • Dried fruit rolls
  • Fruit you can cut in advance like melon cubes
  • Hard-boiled eggs
  • Cheese slices
  • Quality gluten-free crackers (or homemade)
  • Frozen peas
  • Cottage cheese (clean ingredients like Daisy brand)
  • Homemade or plain yogurt (with frozen fruit)
  • Nut butters (for crackers or celery)
