    Less than one person in a hundred has celiac disease. Gluten is the protein found in wheat. When you remove it, there’s nothing left but starch. The removed gluten is then used as a protein supplement (hotdogs, pet food, school lunches). Nobody ever went broke selling bunko health food (quinoa comes to mind) to Americans.
